Rotonda was founded by Salvatore Rincione — a Sicilian-born pizzaiolo who trained under Neapolitan masters before bringing his craft to Australia. The name “Rotonda” (Italian for “round”) is a deliberate nod to the humble pizza: a circle of dough that, in the right hands, becomes something extraordinary.
What started as a passion project at local markets quickly evolved into Sydney's most-loved mobile pizza catering service. Today, Rotonda caters hundreds of events per year — from intimate backyard birthdays to grand wedding receptions for 500+ guests.
The philosophy has never changed: use the best ingredients, perfect the technique, and let the food speak for itself. San Marzano tomatoes from Campania. Buffalo mozzarella from Caserta. Tipo 00 flour milled in Naples. A 48-hour dough fermentation that most caterers simply won't bother with.
